Introducing my Cheesy Baked Cauliflower. It's a low-carb dream come true, a side dish so incredible, it'll make you question why you've ever settled for boring old potatoes. Imagine a cloud of creamy, cheesy cauliflower, roasted to golden perfection.

Preheat the oven to 400°F (200C). Add the cauliflower to the baking dish, sprinkle of salt and a drizzle of olive oil on top. Nestle in the Boursin cheese in the middle and pour in the broth (or water).
Note: You can add the whole block of Boursin or as much as you like (I added ¾ of it). Feel free to use any broth of choice.
Bake uncovered for 35 to 40 minutes, take it out of the oven, mix it all together and enjoy.
Store any leftovers in the fridge.
