In a food processor, blend the feta, cottage cheese, cream cheese, and lime or lemon zest until smooth and fluffy.
Spread a thin layer of mayo on both slices of sourdough. Toast in the air fryer at 425Β°F until golden and crispy. (Alternatively, toast without mayo, or pan-fry with mayo-side down.) Then, spread a generous layer of whipped feta onto the hot toast.
Top with thinly sliced heirloom tomato, sprinkle with salt, and drizzle with olive oil.
Finish with fresh basil (optional) and serve immediately.
