Apple Cookies Recipe

These Apple Cookies taste like heaven. They are warm, sweet, and so incredibly comforting.
In a bowl or mixer, whisk your eggs really well until pale. Add in the sugar and beat until pale and like a thick cream. Now, add in the softened butter and mix until smooth.
In a separate bowl, mix flour with baking powder. Now, slowly incorporate it into the liquid batter using a fork, until you have a sticky dough that holds its shape. If you have to switch to a spatula or your hands go right ahead.
Now, peel and dice 1 to 1.5 apples. Stir the apples into the cookie dough and mix with a spoon or your hands until incorporated.
Use a big spoon or small ice-cream scooper to scoop out your cookies and gently shape them into a ball. Our batter made 14 big cookies but you can make them as small or as big as you like.
Place them on a baking sheet lined with parchment paper and bake at a preheated 350F (177C) oven for 20-25 minutes. Cool.
After they've cooled, sprinkle the tops with icing sugar and enjoy.
