These 2 Ingredient Cookies are a snap to prepare, and they come together so quickly. Plus, you'll be able to use up a few of those ripe bananas that are sitting on your counter! I added coconut and chocolate chips, but the options are endless.

What you need

cup unsweetened shredded coconut

tsp vanilla extract

cup dark chocolate chips

0 Preheat the oven to 350F (177C). Line a baking sheet with parchment paper and set it aside. 1 In a bowl mash 3 very ripe bananas. The riper, the sweeter, we do not want additional sugar in these. Once mashed, add the coconut and stir. 2 Now add the vanilla and chocolate chips and stir again. 3 Use a small cookie scooper and form the cookies into a disc, flatten and shape them in your hands or on the baking sheet. Bake for 15-20 minutes or until golden. 4 My top burner of my oven does not work so what I did was bake them for 16 minutes and then I put the oven on broil for 1-2 minutes until the tops were lightly golden. 5 Keep a very close eye on them as they can burn easily.
