This salad exceeded my expectations and I found myself making it all week long. It was so easy to make and absolutely perfect for anyone that doesn't have much time.

What you need

red bell pepper

cup parmigiano reggiano

cup cucumber

avocado
tsp salt

lemon

tbsp olive oil

tsp balsamic glaze
Instructions
0 Chop up the bell pepper into thin slices or dice them if you wish. 1 Slice or dice the cucumber and avocado, add it to a bowl with the rest of the ingredients. 2 Add salt to taste, lemon juice, olive oil and toss. Drizzle on balsamic glaze and enjoy. 3 This salad should be eaten right away as the arugula will wilt. If you want a salad that will hold up better in the fridge please use kale instead.View original recipe
