These one-dish cottage cheese eggs only take 20 minutes to bake and come out delicious, creamy, and packed with protein - with virtually no prep and minimal clean up.

0 Preheat the oven to 375F (190C). 1 Add the cottage cheese to the middle of an 8 by 8 inch baking dish. Drizzle the dish and cottage cheese with olive oil. 2 Crack the eggs into the baking dish (around the block of cottage cheese), and season with salt and pepper to taste. 3 Bake for 20-22 minutes or until the eggs have set. I like a softer egg, so feel free to adjust the bake time. 4 Take the baking dish out of the oven and stir the warm cottage cheese together with the eggs. 5 Serve on toast, in pitas, for sandwiches, or on the side of bacon/sausage for breakfast!View original recipe
