The Muffins 0 Note: The texture of the muffins will depend on the size of the banana 11 Preheat oven to 350F (180C). 1 In a bowl, mash the ripe banana and add in the egg, vanilla, yogurt. Mix well. 5 Add the shredded carrot and mix again. 6 Add the dry ingredients (oat flour, baking powder, cinnamon) and mix until everything is well combined. 8 Scoop the mixture into a muffin tin lined with parchment paper cupcake liners. 9 Bake at 350F (180C) for 17-20 minutes or until a toothpick comes out clean.
