0 Preheat the oven to 375F (190C). 1 Next, add the egg whites and vanilla to a bowl (or stand mixer). 2 Mix for 5–7 minutes, or until stiff peaks form. The mixture should be thick and glossy. 8 To test if it’s ready, carefully turn the bowl upside down — the egg whites should stay in place without sliding out. 3 Now, use a silicone muffin tin and spray it lightly. With a big spoon or ice cream scoop, scoop the egg white mixture into each slot. 4 Tip: you can do this on a baking sheet as well that is lined and sprayed and make dollops onto it. 5 Bake at 375F (190C) for 15 minutes. Take them out and gently run a butter knife around each one to loosen them.
