0 Peel the top of the cucumber until it is even, and start to make strips with a Y-peeler or a potato peeler. 1 Arrange the strips on a paper towel making sure they slightly overlap one another, as cucumbers have a lot of water content. 4 Pat the cucumber slices down with a paper towel to remove any excess moisture. 2 Now, you can add your favorite fillings. For this recipe, I spread a layer of Boursin (shallot and chive) and added two slices of smoked salmon but you can use regular cream cheese as well. 5 Gently roll it up and cut into bite-size pieces. You can also secure it with toothpicks for ease and make cuts between each toothpick. Enjoy! 3 NOTE: You can use any spread you'd like. Instead of herbed cream cheese, consider using regular or spicy mayo, Tzatziki, hummus, ranch or anything else you enjoy!View original recipe
