
Viral Feta Fried Eggs

We start by warming some crumbled feta (always use feta in brine, never pre-crumbled) in a pan, and frying an egg directly on top to create a lacy, crispy, cheesy crust. Meanwhile, we char a tortilla, smash on some avocado and seasoning, and add the cheesy egg right on top. Perfection!

0 Heat a small nonstick skillet over medium-high heat. Crumble in the feta and immediately crack an egg into the center. 1 The feta is salty so I don't season the egg but you can if you wish. Cover the pan with a lid and reduce the heat to medium-low. 2 Cook for a few minutes until the egg white is set, the yolk is still runny, and the feta is crispy and golden on the bottom. 3 In a bowl, mash the avocado with a pinch of salt and a touch of lemon juice. 4 I charred the tortilla in a pan on the stove and added the mashed avocado on top. 5 Slide the fried feta egg on top of the tortilla, garnish with chives (if desired), and enjoy!View original recipe
